Backed by a highly experienced team, Executive Chef Anthony Fullerton is at the Regatta Boatshed helm. Anthony is an industry veteran with over 30 years experience. Anthony was recently welcomed to the Regatta team in 2016 from QPAC where he oversaw multiple restaurants, catering and food offerings within the multi-faceted performing arts venue.

Originally from New Zealand Anthony began his career in a classic French restaurant in Dunedin before travelling overseas and arriving in Australia in 1991. Anthony made a name for himself as one of Melbourne’s leading chefs in restaurants such as The Iguana Bar, Chipperfield on the Bay, Scusa Mi, Arrigo, Harry’s Bar, Sicilian Vespers, Rupertswood Mansion and Avenel’s iconic Harvest Home Hotel. Moving into boutique hotels, Anthony transported Hotel Realm to the forefront as the leading five star hotel in Canberra, with the award winning Konoba Restaurant, Ostani and leading major events.

Anthony has been involved in the Slow Food movement in Melbourne for many years and has coordinated events and dinners both in Melbourne and overseas. His commitments to the principles of Slow Food are demonstrated in his menus and philosophies.

Anthony’s appreciation for unadulterated foods, passion for sourcing ingredients and producers are all aspects he still seeks today in his passion as a chef. Each ingredient has its own role on the plate which contributes to the overall seduction of the senses.

The attention to detail and emphasis on quality are one of the keys to his success as a leading chef.


Michael Platsis

Regatta Hotel is proud to boast famed Brisbane restaurateur Michael Platsis as the maître d’hôtel of the Boatshed Restaurant.

Michael has had an illustrious career helping to establish the Brisbane dining scene. His greatest feat is perhaps Michael’s Riverside, a renowned fine-dining restaurant in the Brisbane Riverside precinct, which opened in 1996 and closed in 2007. Mr Platsis has catered for celebrities such as Mick Jagger, Rod Stewart and Bono.

In 2001, Mr Platsis was awarded a Centenary Medal for his contribution to Queensland industry and commerce.
